Green tea extract is made from the world-famous tea plant (Camillia sinensis) which is used to make both green and black tea. The main difference between green and black tea is the way in which the plant leaves are processed. In the drying method for black tea, the leaves are allowed to oxidize and the ingredients that are the potent antioxidants are converted to less active substances. In green tea, by contrast, the potent antioxidants remain.

Green tea contains a very high value of catechin polyphenols that have antioxidant properties known to fight against cancer. In addition, green tea provides polysaccharides, flavonoids, vitamin B complex, vitamin C, vitamin E, R-Amino butyric acid and fluoride in its natural state. Green tea has higher values of medicinal properties than other teas, because of the special way in which it is dried. Green tea extract contains AHAs (lactic and citric acid), aloe, chamomile, and vitamins A, C, and E. Dried tea leaves contain polyphenols, including flavonols such as catechins, flavonoids and flavondiols. The leaves also contain the stimulants caffeine, theobromine and theophylline. The composition of green tea varies with the geographic origin of the leaf, the time of harvest and the manufacturing process.

An ingredient in green tea, called polyphenols, is responsible for its activity as a potent antioxidant. Studies have reported green tea to have greater antioxidant activity than either vitamin E or C. In fact, green tea was found to be 200 times more effective than vitamin E in neutralizing the effects of oxidative substances and free radicals on lipids. Additionally, green tea extract was found to possess 20 times greater ability to prevent peroxide formation (a product of oxidation) in lard (lipids).

Green tea is used as an alternative preservative in some products, which are aimed at the consumer who might want natural products rather than synthetic preservatives.
